Chili Roast Potatoes
Ingredients:
500gms Baby Potatoes
2/3-Cup Oil
1tsp Chili Powder
"' tsp Caraway Seeds
1tsp Salt
1tbsp Chopped Fresh Basil
Method:
Cook the Potatoes in a saucepan of boiling water for 10 minutes. Drain the Potatoes thoroughly. Pour a sufficient quantity of the Oil into a shallow roasting pan to coat the base.
Heat the Oil in a preheated oven at 400 D F for 10minutes. Add the Potatoes to the pan and brush them with the hot Oil. In a small bowl, mix together the Chili powder, Caraway Seeds, and Salt.
Sprinkle the mixture over the Potatoes, turning to coat them all over. Add the remaining Oil to the pan and roast in the oven for about 15 minutes, or until the Potatoes are cooked through. Remove the Potatoes from the Oil, and transfer the to a warm serving dish. Sprinkle the chopped Basil over the top and serve immediately.
