Vegetable Sagu Recipe: How To Prepare Mix Veg Sagu
Vegetable sagu is a traditional South Indian curry that is prepared as a side dish with the main course. Here is a video recipe. Read and follow the step-by-step procedure containing images.
Vegetable sagu is an authentic South Indian side dish which hails from the state of Karnataka. It is prepared as a breakfast dish and is usually paired with poori, set dosa and chapati. There are variations to vegetable sagu in the Northern and Southern parts of India. The veg kurma recipe acts as a synonym to the vegetable sagu recipe.
Vegetable sagu is prepared with different vegetables cut well and mixed with masala once cooked. Required amount of spice is added to even out the sweetness of the vegetables. The balancing of these flavours plays a significant role in bringing out the delectable bowl of sagu.

VEGETABLE SAGU VIDEO RECIPE

French beans (chopped) - 1 cup
Cabbage (shredded) - 1 cup
Carrot (chopped) - 1 cup
Potato (chopped) - 1 cup
Peas - ¾th cup
Water - 4 cups
Salt - 3 tsp
Coconut (grated) - 1 cup
Green chilli - 6
Coriander leaves (chopped) - ¼th cup
Curry leaves - 10-12
Jeera (cumin seeds) -1 tbsp
Roasted gram - 1½ tbsp

1. Take a pan and allow it to heat up.
2. Add chopped beans (French beans) and shredded cabbage to it.
3. Add carrots to the same.
4. Also add peas to get the sweet flavour amidst the spicy sagu.
5. Now, add the potato cubes, 3 cups of water and salt.
6. Mix well and cover it with a lid.
7. Allow it to cook for 10 to 15 minutes.
8. Meanwhile, add grated coconut in a mixer jar with chillies.
9. Along with it, add coriander leaves, curry leaves and jeera.
10. Lastly, add the roasted gram and a cup of water.
11. Grind it into a smooth consistency.
12. Open the lid of the pan and make sure the vegetables are cooked well.
13. Add the ground masala to it and mix well.
14. Allow it to boil for 5 minutes.
15. Transfer it into a bowl and serve hot.
- 1. Vegetables can be added according to one's preference.
- 2. The gravy base can be made creamy by adding cashew paste or yoghurt. The creamy gravy is usually made in veg kurma.
- 3. However, the sagu can be garnished with roasted cashew nuts and coriander leaves.
- 4. Do not overcook the vegetables as it can make the whole sagu taste bland.

STEP BY STEP - HOW TO MAKE VEGETABLE SAGU
1. Take a pan and allow it to heat up.
