Ramazan Special: Qabooli Pulao Recipe

Qabooli Pulao is a very healthy dish that can be relished in the holy month of Ramazan at dinner time. It is also called Afghani Pulao as it is a Central Asian dish that has many variaties. It can also be prepared with many vegetables such as cauliflower, cabbage, carrots etc.
We will share with you Qabooli pulao recipe made from lentils. Qabooli pulao is healthy as it is made from channa dal, which is rich in proteins. This special Qabooli pulao has a variety of spices which add a rich flavour to it.
Here is the simple method for the preparation of Qabooli pulao recipe.

Ingredients:
- Gram lentils: 1 cup
- Rice: 3 cup
- Chopped onion: 4
- Yogurt: ½ cup
- Green chilies: 4
- Ginger garlic paste: 1 tbsp
- Butter: 2 tbsp
- Small cardamom: 4
- Black cumin: 1 tsp
- Salt: to taste
- Oil: 1 cup
For stock:
- Coriander seeds: 1 tbsp
- Fennel seeds1 tsp
- Onion: 1
- Ginger: 1 small piece
- Garlic: 1
- Water: 3cups
- Serves: 4
- Preparation time: 15 minutes
- Cooking time: 30 minutes
Method Of Preparation
- Boil rice and cook it half (70 percent).
- Boil the lentils till they become soft.
- Heat oil in a pan and fry onions till golden brown.
- Add these fried onions in boiled rice.
- For stock, take 3 cups of water in the pan and add 1 tsp fennel seeds, 1 tbsp coriander, 1 piece of ginger and 1 garlic.
- Add ½ cup yogurt in the oil along with lentils, salt, 1 tbsp ginger garlic paste,1 tsp black cumin, green chilies, small cardamom and cook it for 10 minutes.
- Add the prepared stock to the above yoghurt and lentil mixture and boil the mixture for 5 minutes.
- Pour all the contents in rice and cook on simmer for 15 minutes.
- Add butter to the rice on the top layer.
- Serve hot and garnish with crushed cashews.
