Spicy Aloo Parval Ki Sabji Recipe
Parval or pointed gourd is a popular vegetable during the winter season. This vegetable is tasty and healthy too. It is an excellent source of carbohydrates, vitamin A and C which is very essential to boost your immunity during the winter season. Parval is a vegetable that can be prepared in numerous ways. You can simply fry it up with other vegetables of your choice or you can go the lavish way of eating it by stuffing paneer or chicken into it. But, in every way this green delight tastes awesome.
Today, we have a simple yet mouthwatering recipe of spicy aloo parval ki sabji for you to try. This dish tastes extremely delicious due to the variety of spices added to it and also has the tangy kick due to the essence from yogurt. This simple vegetarian recipe of aloo parval ki sabji is a definite delight for your kids who usually are not fond of veggies on their plates.

Ingredients
- Parval (pointed gourd)- 500 gms (cut into medium sized pieces)
- Potatoes- 4 (diced)
- Onion paste- 4tbsp
- Ginger-garlic paste- 1tbsp
- Yogurt- ½ cup
- Turmeric powder- 1tsp
- Red chilli powder- 2tsp
- Cumin powder- 1tbsp
- Coriander powder- 1tbsp
- Garam masala powder- 1tsp
- Sugar- a pinch
- Hing (asafoetida)- a pinch
- Salt- as per taste
- Cumin seeds- 1tsp
- Cinnamon stick- 1
- Green cardamoms- 3
- Bay leaf- 1
- Oil- 2tbsp
- Ghee- 1tsp
- Water- 1 cup
Procedure
- Wash the potatoes and parval properly with clear running water.
- Heat one tablespoon of oil in a pan and fry the aloo and parval together with a little salt on a medium flame.
- Once the vegetables turn golden brown in colour from all the sides, transfer them to a plate and keep it aside.
- Again heat one tablespoon of oil in a pan and add cumin seeds, hing, cinnamon, cardamoms, bay leaf. Fry the ingredients for about 2-3 minutes.
- Then add to the mixture the onion paste and fry for 4-5 minutes on a medium flame.
- Add in the ginger-garlic paste, turmeric powder, red chilli powder, cumin powder, coriander powder and fry for 3-4 minutes.
- Mix the sugar with yogurt and whisk it well with a spoon.
- Add this yogurt mixture slowly to the pan and keep stirring. Mix well.
- Now add the fried aloo and parval to this mixture and mix properly.
- Add salt and cook for about 3-4 minutes.
- Then add in the water and mix.
- Cover the pan with a lid and cook the curry on a medium flame for about 8-10 minutes.
- Once done, remove the lid and check if the vegetables are cooked properly.
- Once cooked, add the garam masala powder, ghee and mix well.
- Switch off the flame and serve.
