Potato Paliya Recipe For Masala Dosa
Masala dosa is one of the most famous South Indian breakfasts you would find in every restaurant in the city. If you happen to take a stroll to the nearest South Indian hotel you would see people queuing up enjoying a crispy masala dosa.
To go along with it, the potato paliya is the most important ingredient which is seen wrapped up inside the dosa. There are many people who opt for a masala dosa just because of the yummy potato paliya.

This is how you make potato paliya for your masala dosa, take a look:
Serves: 2
Preparation Time: 20 minutes
Cooking Time: 10 minutes
Ingredients
- Potatoes - 2 (peeled and boiled)
- Onion - 1 (chopped)
- Peas - ¼ cup
- Mustard Seeds - 1tbsp
- Black gram - 1 tbsp
- Saffron - 1 tsp
- Lemon juice - 1 tsp
- Curry leaves - handful
- Dry red chilies - 2
- Green Chilies - 2 (sliced)
- Sugar - a pinch
- Salt to taste
- Oil - 3 tbsp
- Coriander leaves for garnishing
- Grated coconut for garnishing
Procedure
- To make the masala dosa potato paliya, first you need to start chopping the onion into fine pieces. Slice the green chilies into thin pieces as well.
- Now in a pressure cooker, boil the potatoes for 3 whistles. When done, peel the skin from the potatoes and mash them using a masher.
- In a pan, heat a little oil and add in the mustard seeds, black gram, saffron, curry leaves, red chilies and the green chilies and fry the ingredients in the hot oil until it is fried properly.
- When the ingredients begin to splutter in the hot oil, add in the chopped onions to the hot pan and mix it well using a flat spoon.
- After a few minutes when the onions are completely cooked in this mixture, slowly begin to drop in the peas to the pan. Fry the ingredients for a minute of so and let it cook for 5 minutes on a low flame.
- Now add in the mashed boiled potatoes to the pan and stirring it continuously on a low flame will allow the potato to get cooked with the ingredients.
- Now to this mixture, add in the sugar, lemon juice and the required salt for taste.
- Let the ingredients cook for a couple of minutes on a now medium flame.
- After 10 minutes of stirring the ingredients in the pan, switch the flame off and garnish it with the chopped coriander leaves and grated coconut too.
When your masala dosa is ready, place the potato paliya in the center of the dosa and fold it into half.
