Coconut pudding recipe:
Ingredients for Caribbean coconut pudding recipe:
Freshly grated coconut: 3 cups
Water: 3 cups
Nutmeg (ground): 1 tsp
Cinnamon (ground): 1 tsp
Lemon Rind: 1
Sugar: 1 and ' cups (or as per the sweetness your desire)
Eggs: 6
Method to prepare Caribbean coconut pudding:
- Melt sugar (with water) in a thick saucep and add nutmeg. The syrup that you obtain after melting sugar should be of string consistency.
- To this syrup, add the grated coconut, while stirring continuously. Keep cooking for up to 10 minutes.
- Crack the eggs and separate the yolks. Beat the yolks, along with the lemon rind, until they form a thick consistency.
- Before the mixing this yolk mixture with the coconut, remove the lemon rind.
- Cook for 10 more minutes (over low heat), again stirring constantly.
- Grease a dish and pour it the coconut mixture into it. Refrigerate for at least 2 hours before serving.
Yummy Caribbean coconut pudding is ready to serve!
