Kaju Halwa: Recipe To Make Holi Richer

Now Indian desserts are not exactly for the calorie conscious but even if you are finicky about food, you can taste just a spoonful of this dessert because it is extremely nutritious. In fact, this Holi recipe is actual used to make a dish to feed expectant mothers for strength. So go on, don't deny yourself that mouthful.
Ingredients For Halwa Recipe:
1. Kaju or cashew 250 grams (chopped)
2. Milk 1 litre
3. Sugar 3-4 tablespoons
4. Ghee or clarified butter 2 tablespoons
5. Kesar or saffron few strands
Procedure For Halwa Recipe:
- Fry the chopped cashews in ghee for 4-5 minutes until they turn totally brown. Remove them from flame and let them cool.
- Meanwhile start boiling milk on low flame. Do not put it on high flame because the milk might boil over.
- When the milk bubbles add sugar and stir it continuously for 2-3 minutes. Meanwhile the kaju mixture must have cooled. Grind it in the blender.
- Add a pinch of saffron to the milk and stir it a few times to make the colour spread uniformly.
- Add the fried cashew mixture to the milk and stir it continuously for the next 2 minutes.
- Let the milk boil on low flame and reduce in volume to make the halwa thick.
Serve this Halwa on Holi, topped with lots of chopped dry fruits.
