Dried Fruit Cookie Recipe: Evening Snack
When the sun sets and your tired eyes are weary, you should treat yourself to some energising foods which will boost your energy levels. There are lots of foods which will help boost your energy, but you can only try out one energy food recipe at a time.

You can now provide your body with sustained energy. The healthy aspect of dried fruit is that, it provides one with a touch of sweetness along with the added benefits of fiber. Just a small handful is best. Try this dried fruit recipe for an evening snack!

This dried fruit cookie can now be made at home. Its taste is going to be irresistible.
Serves - 3
Cooking Time - 30 minutes
Preparation Time - 40 Minutes
Ingredients
- All purpose flour - ¾ cup
- Baking soda- ½ tbsp
- Butter - ¼ cup
- Brown Sugar - 2 cups
- Granulated sugar - 2 ½ cups
- Egg - ½
- Vanilla Essence - ½ tbsp
- Coconut - 1cup (shredded)
- Dried fruits - 2cups (chopped)
- Salt to taste
Method
- To make your cookies first you need to preheat the oven to 350 degrees.
- In a bowl, whisk the flour, baking soda and required salt.
- Add in the butter to the ingredients. With an electric mixer, mix the ingredients on a medium speed until it turns smooth.
- Add in the brown and the white sugar to the mixture, mix it until pale and fluffy. Whisk continuously for about 3 minutes.
- Now add the egg and vanilla essence to the mixture and whisk it again.
- Add the flour, coconut and dried fruits to the mixture.
- Stir the mixture together for about 5 minutes continuously.
- Now drop the batter onto the baking sheets, spacing it 2 inches apart.
- Flatten the batter slightly before you allow it to bake.
- Bake the cookies for 12 minutes, until it turns golden brown.
- When done, remove the cookies from the sheet and place them on parchment paper to cool it completely.
Your dried fruit cookies are now ready to eat. Wait for it to cool before you consume.
