Coconut Vadas: Spcl Ugadi Recipe
Ugadi is jointly the new year of Kannadigas and Telugu people. And the good news is that it is just around the corner. Every year, people celebrate Ugadi with recipes that are both traditional and novel. So if you have already tried and tasted all the usual Ugadi recipes, you can start on some new Ugadi dishes. Coconut vadas for example are a special novelty to try this Ugadi.
Vadas are usually made out of sooji or rice paste. However, when coconut is the main ingredient for vadas, they are bound to be more delicious. This Andhra recipe is both sweet and spicy. Coconut vadas get their sweetness from the coconut and spicy flavour from green chillies that are abundantly added to the batter. Here is a Ugadi recipe that is both festive and easy to prepare.

Preparation Time: 30 minutes
Cooking Time: 15 minutes
Ingredients
- Coconut- 2 cups (grated)
- Sooji- ½ cup
- Besan or gram flour- ½ cup
- Mustard seeds- 1 tsp
- Green chillies- 7 (chopped finely)
- Curry leaves- 5 (chopped)
- Ghee- 1tbsp
- Oil- 2 cups
- Salt- As per taste
Procedure
- Make a batter out of coconut, besan and sooji.
- Add about half a cup of water to make the batter thick.
- Heat ghee in a pan, temper it with mustard seeds and curry leaves.
- Pour the stinging ghee into the batter.
- Now, add salt and green chillies.
- Mix up the batter with your hands and form round vadas with it.
- Heat oil in a deep bottomed pan; when the oil is steaming, deep fry the vadas in it for about 5 minutes.
- You can have crisply coconut vadas with coriander chutney or the typical spicy red chilli chutney from Andhra.
