Chicken n Peas Rice Recipe

Chicken & Peas Rice Recipe
Serves: 3
Preparation time: 10 minutes
Cooking time: 50 minutes
Ingredients
- Chicken thighs- 3-4 (peeled and washed)
- Frozen peas- 1 cup
- Rice- 1½ cup
- Garlic- 3 pods (minced)
- Lemon zest- 1 (grated)
- Black pepper powder- ½ tsp
- Chicken broth- 2 cups
- Fresh thyme- 2 sprigs
- Olive oil- 1tbsp
- Water- 1 cup
- Salt- as per taste
Procedure
- Season the chicken pieces with salt and black pepper powder. Mix well.
- Heat oil in a deep bottomed pan with a tight-fitting lid. Add the chicken pieces and then cook for about 10 minutes and flip around; until it turns brown on both the sides.
- Add the garlic and thyme in the pan and stir well. Cook for about 1 minute and then add grated lemon zest and rice. Gently mix so that the rice is mixed well with the chicken pieces.
- Now add chicken broth and water. Mix well and close the lid. Cook on simmer for 40-45 minutes.
- Meanwhile soak the frozen peas in hot water and keep aside. Open the lid, stir and check to see if the rice is cooked. Now add the peas and cook for another 3-4 minutes.
Chicken & peas rice recipe is really easy! Serve this dish hot. Sprinkle lemon to make it taste all the more delicious.
