The mirch ka achaar has the pungency of the mustard seeds and mustard oil and the perfect blend of other spices with the heat of the chilli. Together, it makes a perfect condiment to go with the main course.
The green chilli pickle is a simple achaar recipe to prepare, unlike other pickles that have a complicated procedure. This is an instant pickle and can be eaten immediately or preserved and had later. However, the more you soak and preserve, the better the taste.

Green chillies (baji mirchi) - 250 g
Mustard seeds - 2½ tbsp
Saunf powder (fennel seed powder) - 1½ tbsp
Dhaniya powder (coriander powder) - 1½ tbsp
Amchur powder - 2 tbsp
Turmeric powder - ½ tbsp
Salt - 2 tbsp
Mustard oil - 1 cup

1. Slit the green chillies in the centre and keep them aside.
2. Add mustard seeds into a mixer jar and powder it.
3. Take the powdered mustard seeds in a bowl.
4. Add saunf powder and dhaniya powder.
5. Then, add amchur powder and turmeric powder.
6. Add salt.
7. Mix thoroughly.
8. Then, add mustard oil and mix well again.
9. Take a spoonful of the mixture and fill it in the slit part of the mirchi.
10. Allow it to soak for an hour and serve.
- 1. The mirch ka achaar can be preserved for 2-3 weeks if it is stored in an air-tight jar.
- 2. If it is stored in the refrigerator, it can be preserved for a month.
