Quick Bharwan Karela Recipe
Karela or bitter gourd is definitely not a vegetable that everyone looks up to. In fact, it stands top on the most hated list of vegetables for most of us. But it is an undenying fact that karela is also one of the most nutritious vegetables that you can eat. Bitter gourd or karela is a storehouse of nutrients and it is essential that you include it in your diet if you want to stay healthy.
But since most of us do not quite enjoy the bitter taste of the vegetable so we have to take out the bitterness and make it tasty. Bharwan karela is a popular recipe in the Northern parts of India where people stuff the karela with spices to make it taste delectable. It is one karela dish which you are definitely going to love.

Preparation time: 15 minutes
Cooking time: 20 minutes
Ingredients
- Karela (bitter gourd)- 4 (small, peeled)
- Hing- a pinch
- Jeera (cumin seeds)- 1tsp
- Turmeric powder- 1tsp
- Dhaniya (coriander) powder- 2tsp
- Saunf (fennel) powder- 2tsp
- Amchoor powder- 2tsp
- Red chilli powder- 1tsp
- Salt- as per taste
- Oil- 4tbsp
Procedure
1. After peeling the karela marinate it with a little salt and keep aside for 15 minutes. This will take away the bitter taste.
2. Slit the karela from one side and scoop out the seeds from it.
3. Heat two tablespoon of oil in a pan and add jeera seeds, hing and fry for a minute.
4. Then add turmeric powder, dhaniya powder, salt, amchoor powder, saunf powder, red chilli powder and fry for 3-4 minutes.
5. After that switch off the flame and wait for the stuffing to cool down.
6. Fill the slit karela with this stuffing.
7. Now heat another two tablespoon of oil in a pan and fry the stuffed karelas in it by covering the pan with a lid on medium flame for 4-5 minutes.
8. Once done, switch off the flame and serve.
Bharwan karela is ready to be served. Enjoy the spicy-bitter treat with steamed rice.
