Pumpkin Curry For Navratri Vrat
It is the fourth day of Vasant Navratri and the fasting is on. It is difficult to think of new dishes everyday which can be consumed during the fast. Eating the same aloo sabji everyday can get extremely monotonous. So, change your taste with this simple, sweet and tangy pumpkin curry.
This special pumpkin curry for Navratri vrat is prepared without onions and garlic. Dry mango powder and jaggery are added to the curry to give it a sweet as well as tangy kick. It is one of the best recipes that you can try during the Navratri vrat.

Ingredients
- Pumpkin- 1 (medium sized, diced)
- Methi (fenugreek) seeds- 1tbsp
- Turmeric powder- ½ tsp
- Roasted cumin powder- 1tsp
- Dry mango powder- 2tsp
- Jaggery- 1tbsp (grated)
- Rock salt- as per taste
- Oil- 1tbsp
- Water- 1 cup
- Coriander leaves- 2tbsp (chopped)
Procedure
1. Wash the pumpkin pieces properly and keep it aside.
2. Heat oil in a pan and add methi seeds to it.
3. Once the seeds start to crackle, add the pumpkin pieces to it.
4. Stir fry for 3-4 minutes on medium flame.
5. Add the roasted cumin powder, rock salt, dry mango powder, turmeric powder and cook on medium flame for 4-5 minutes.
6. Now add the grated jaggery and water to it. Mix well.
7. Cover the pan with a lid and cook on low flame for about 5-6 minutes.
8. Once done, switch off the flame and garnish with chopped coriander leaves.
Sweet and tangy pumpkin curry is ready to be served. Eat this curry during your vrat with kuttu ka paratha.
