Bhutte Ka Kees Recipe From Madhya Pradesh
We have tried dishes from North, South, East and Western Part of India. So, today we head to the Central part of India for some lip-smacking delicacies. Indore, in Madhya Pradesh is famous for its amazing street food. In fact, Indorians have a place known as Sarafa Bazaar where they sell only street food and there are numerous shops lined up for the same.
Today's recipe has been picked up from one of the street delicacies of Sarafa Bazaar. This recipe is made with corn and is known as Bhutte ka kees. The sweet corn is ground and made into a spicy snack with a tangy twist. It is a healthy, vegetarian snack which you can enjoy at any time of the day or have it as a side dish.

Ingredients
- Sweet corn cobs- 3
- Cumin seeds- 1tsp
- Mustard seeds- 1tsp
- Hing- ½ tsp
- Ginger- 1 medium piece
- Green chillies- 2
- Salt- as per taste
- Turmeric powder- ½ tsp
- Sugar- a pinch
- Coconut- 1tbsp (grated)
- Coriander leaves- 2tbsp (chopped)
- Lemon juice- 1tsp
- Oil- 2tbsp
Procedure
1. Remove the corn from the cobs and grind it along with ginger and green chillies into a coarse paste.
2. Heat oil in a pan and add cumin seeds, mustard seeds, hing, turmeric powder and saute for a few seconds.
3. Add the coarsely ground corn to it and mix well.
4. Add salt, sugar and mix well.
5. Once done, switch off the flame and garnish with lemon juice, grated coconut and chopped coriander leaves.
Bhutte ka kees is ready to be served. You can have it all by itself or you can even pair it with rotis like a side dish.
