Bhindi Ka Salan: Delicious Vegetarian Recipe
Bhindi or lady finger is a versatile vegetable. It can be cooked with so many different ingredients. It imbibes the flavours of the ingredients it is cooked with very well. If you are wondering how to make this squishy vegetable into a tasty dish then here is a simple recipe of bhindi which goes very well with hot fulkas or rotis.
Salan is a very popular recipe from Hyderabad. It is generally prepared with green chillies. But here we are using the same ingredients used in salan to make this delicious vegetarian recipe of bhindi ka salan. You can cook this lip-smacking side dish with simple handy ingredients. It tastes even better if you fry the bhindi before adding the spices.

Serves: 3-4
Preparation time: 15 minutes
Cooking time: 20 minutes
Ingredients
- Bhindi (lady finger)- 500 gms
- Onion- 1 (big, sliced)
- Ginger-garlic paste- 1tsp
- Red chilli powder- 1tsp
- Turmeric powder- ½ tsp
- Coriander powder- 1tsp
- Salt- as per taste
- Oil- 2tbsp
- Coriander leaves- 2 sprigs (chopped)
Procedure
- Wash the bhindi properly. Pat it dry with a kitchen towel. Chop off the ends and slice them into small pieces.
- Heat one tablespoon of oil in a pan and fry the bhindis for about 5 minutes. Then transfer it to a plate and keep it aside.
- Now heat a tablespoon of oil and add the sliced onions. Fry on medium heat for 3-4 minutes till they turn transparent.
- Add the ginger-garlic paste and cook for another 2 minutes.
- Now add turmeric powder, red chilli powder, coriander powder, salt and cook for about 2-3 minutes.
- Add the fried bhindi pieces and mix well.
- Sprinkle a little water if required.
- Cook on low flame for about 7-8 minutes till the bhindi is completely cooked.
- Once done, switch off the flame and garnish with chopped coriander leaves.
Serve this delicious bhindi ka salan with hot fulkas/rotis. It is a superb treat for the vegetarians and vegans!
