Delicious Avarekalu Sambhar Recipe

Avarekalu is the local term for Hyacinth beans. The beans are very popular in Karnataka. Every year, an Avarekai mela is organised. Farmers from around the state bring their produce (avarekai beans) and sell it. Retailers, wholesalers and women come to buy the beans. So, it is the perfect time to prepare dishes using avarekalu.
Avarekalu sambhar is one of the delicious Karnataka recipes. You can prepare it easily and serve as a side dish with rice, dosa or idlis. Check out the recipe to prepare avarekalu sambhar.

Avarekalu sambhar recipe:
Serves: 3-4
Preparation time: 5 minutes
Cooking time: 20-25 minutes
Ingredients
- Avarekalu- 2 cups
- Onions- 2 (finely chopped)
- Brinjal- 1 (cut into small pieces)
- Garlic- 5-6 pods (peeled)
- Tomato- 1 (chopped)
- Tamarind pulp- 1tbsp
- Coriander powder- 1tsp
- Red chilli powder- 1tsp
- Mustard seeds- ½tsp
- Curry leaves- 6-7
- Jaggery- 1 small piece
- Salt- as per taste
- Oil- 2tbsp
- Water- 2 cups
Procedure
- Wash the beans and pressure cook in enough water for a duration of 2 whistles. Let it cool. Drain the water.
- Now, heat oil in a deep bottomed frying pan. Season with mustard seeds and curry leaves. When the seeds start to splutter, add the onions and garlic. Saute for 2-3 minutes on a medium flame till the onions turn golden brown.
- Add the chopped tomatoes and brinjal. Saute for another 3 minutes. Sprinkle salt, coriander powder, red chilli powder. Also pour the tamarind pulp and add the jaggery. Add 2 cups water and bring it to boil.
- Add the boiled beans and let the sambhar thicken. Simmer for 4-5 minutes. When the gravy thickens, put the pan off flame.
Avarekalu sambhar recipe is ready to eat. Serve it hot with rice.
