Bengali Sweet Pulao Recipe
There is big misconception in the world that all the Indian dishes are spicy. That is why, we present to you a pulao recipe that will suit the taste buds of people globally. Sweet pulao or Mishti pulao is a Bengali recipe. The specialty of this pulao recipe is that is sweet.
However, do not mistake to take sweet pulao for a dessert. It is very much a main course Bengali recipe. Sweet pulao is supposed to be teamed up with spicy gravies. The combination of this sweet pulao recipe and volcanically spicy curries makes a great culinary treat. Sweet pulao is basically prepared with fried dry fruits and very minimal spices.

Preparation Time: 10 minutes
Cooking Time: 30 minutes
Ingredients
Basmati rice- 2 cups (washed and soaked for 30 minutes)
Ghee- 3tbsp
Bay leaves- 2
Green Cardamom pods- 4 (broken)
Cinnamon stick- 1 inch
Black Cardamom- ½
Sugar- 1tbsp
Turmeric powder- ½ tsp
Cashew nuts- 10
Raisins- 10
Onions- 2 (sliced)
Salt- as per taste
Procedure
Heat ghee in a deep bottomed pan. When it is sufficiently warm, add onions to the pan. Fry them crisply for 10 minutes. Then strain the fried onions and keep them aside. Add the dry fruits, cashew nuts and raisins to the ghee. Saute them for 2 minutes on a low flame. Strain the dry fruits and keep them aside. Season the left-over ghee with bay leaves, cinnamon stick, green and black cardamom pods.
Saute for half a minute and add sugar. Them add turmeric and stir all the contents of the pan. Add the rice and fry it with the ingredients of the pulao for 2 minutes. Add salt. Pour 3 cups of water, cover and cook on a low flame for 10-12 minutes.
After this, check by breaking a grain of cooked rice between your fingers. If the rice is cooked properly, garnish with fried onions and dry fruits.
You can have sweet Bengali style pulao with mutton or chicken kosha.
