Methi and Palak Pulav
Ingredients:
2 cups Basmati rice
250g fresh methi leaves, chopped
200g fresh palak, chopped
3-4 cardamom pods
4-5 cloves
250 ml coconut milk
2-3 tbsp ghee
4-5 tbsp vegetable oil
2 tsp jeera
1pinch turmeric
Cashew nuts as desired
Method:
In a frying pan add the ghee and oil. To this add jeera, when it starts spluttering add the powdered cardamom and cloves. Add turmeric and 2-3 curry leaves.
Some mint leaves can also be added. Keep this aside.
Wash basmati rice and drain water. Put the rice in a pressure cooker.
Wash the chopped methi and palak in hot water and drain the water.
Add this to the rice along with the fried jeera and cardamom mixture.
Add the coconut milk and the required quantity of water [1 cup less than added usually]and cook till 1 whistle.
To this add roasted cashews.
Serve hot with cucumber raita.
