Palak Pulao Recipe For Navratri Fasting
Navratri means nine days of fasting and restricted diet. It is not so easy to cook with restricted ingredients. That is why; you need a wide variety of Navratri recipes in your kitty so that you don't get bored with the same old dishes for nine days. Palak pulao is one such innovative recipe that you can try out this festive season.

Mostly, Navratri recipes do not include rice because it is prohibited during the fast. However, devotees are allowed to have the special vrat ke chawal instead. Palak pulao is prepared with vrat ke chawal in the spirit of Navratri. So if you are having cravings for rice during Navratri, then this recipe for Palak pulao is perfect for you.

Serves: 4
Preparation Time: 20 minutes
Cooking Time: 30 minutes
Ingredients:
- Spinach- 2 bunches (chopped)
- Vrate ke chawal- 2 cups (soaked)
- Cardamom- 2
- Cloves- 2
- Cinnamon stick- 1 inch
- Pepper Corns- 4
- Star Anise- 1
- Bay leaf- 1
- Cumin seeds- 1tsp
- Tomato- 1 (chopped)
- Green chillies- 2 (sliced)
- Turmeric- ½ tsp
- Coriander powder- 1tsp
- Cumin powder- 1tsp
- Rock Salt- as per taste
- Ghee- 2tbsp
Procedure
- Heat ghee in a pressure cooker.
- Season it with bay leaf, cumin seeds, green chillies, cardamom, cloves, pepper corns, star anise and cinnamon stick.
- Let the flavours bleed for 1 minute and then add the palak.
- Cook on a low flame until all the water from the spinach evaporates.
- Then add tomato, sprinkle salt, turmeric, coriander and cumin powder.
- Stir and cook for 2-3 minutes.
- Then add vrat ke chawal and stir it it. Keep stirring and cook for 3-4 minutes.
- Add 4 cups of water and close the lid of the pressure cooker.
- Cook for the duration of 2 whistles.
You can serve palak pulao with a Navratri special Aloo dish.
