Buttermilk Sambar Recipe With Veggies
Many call it chaas and you would know it as buttermilk. This is one of the effective beverages to consume when summer is soon approaching. The many health benefits of buttermilk will leave you astounded too. The reason why buttermilk is an important beverage in every Indian home is only because it has the ability to reduce a high blood pressure level, removes toxins from the body and more importantly buttermilk keeps the body cool.

This afternoon Boldsky shares with you an easy buttermilk sambar recipe. To prepare this yummy summer treat, you will need veggies too. The vegetables added to this particular sambar recipe will define its flavour. To prepare this yummy buttermilk sambar or rasam recipe, take a look at the lunch recipe shared below.

Step by step method to prepare buttermilk sambar:

Preparation Time: 20 minutes
Cooking Time: 30 minutes

All You Need
- White Pumpkin - 2 cups (chopped finely into pieces)
- Bengal Gram- 2 ½ tbsp
- Green Chilli - 3 (sliced)
- Coconut - ½ cup (grated)
- Ginger - 1 piece
- Coriander Seeds - 1 ½ tsp
- Coriander Leaves - 1 (chopped finely)
- Mustard Seeds- 1 tsp
- Cumin Seeds- ½ tsp
- Hing - ¼ tsp
- Turmeric Powder - ½ tsp
- Yogurt - 1 cup
- Water - 2 cups
- Salt to taste

For Tempering
- Oil - 2 tbsp
- Mustard Seeds - ½ tsp
- Curry Leaf - 5
- Dry Chilli - 2

Procedure
- Soak the bengal gram in water and allow it to soak for at least 8 minutes.
- Clean the white pumpkin and remove the seeds.
- Take a deep pot and pour 2 cups of water. Over a medium flame allow the water to come to a boil. Add salt and then add in the white pumpkin. Cover the pot with a lid and allow the vegetable to cook.
- Now add a little water to the cup of yogurt and mix well.
- In a mixer grinder, add in the soaked dal, grated coconut and the mustard seeds. Also add in the mustard seeds, jeera or cumin seeds and the sliced green chillies. Give it a mix and then add coriander leaves, turmeric powder, ginger, hing. Also add a little water and then give it a grind to make the ingredients into a thick paste.
- Take a look at the boiled pumpkin and drain out the water.
- Now add the ground mixture to the white pumpkin and give it a good stir. Add in a little water to the mixture and allow the ingredients to cook well over a low flame.
- After 12 minutes, add in the curd water and salt to taste.
- Now take a separate tava. Pour a little oil and wait for the oil to turn hot. Add in the mustard seeds and wait for it to crackle. Now add in the dry red chilli and the curry leaf.
- When done, add the tempering to the main dish. Mix well and serve.

This dish can be prepared with vegetables like - okra (ladies finger), bringal, bottle gourd, capsicum and spinach.
