Ingredients:
250gms Small Brinjal/Baingan/Egg Plant
25gms Sour Mango Papad / Mamla
20gms Jaggery
2 - 3 Green Chilies
A few Curry Leaves
A small bunch of Coriander Leaves
1tbsp Curds
Salt to taste
2tsp Oil
Oil for deep-frying
Method:
Cut the Brinjal into four quarters keeping the stem intact. Deep-fry the Brinjals and keep aside. Soak the Mango Papad in little water.
Mash with a spoon and keep aside. Add Jaggery to it and mix well. Grind Green Chilies, Curry Leaves and Coriander to a paste.
Heat Oil and saute for a minute or two. Add Curds and let it cook until the moisture evaporates.
Add Brinjals, Salt and mix well. Next, add the mixture of Jaggery and Mango Papad mix well and serve.
