Kadai Bhindi Masala
Bhindi aka lady finger is a vegetable which is enjoyed in almost every Indian home in all its avatars. You can try out numerous recipes with this vegetable. Bhindi doesn't take much time to cook and works wonders for diabetes and indigestion.
Kadai bhindi masala is a simple recipe with a tangy twist. In this recipe, bhindi is cooked along with capsicum and tomato which adds a very different flavour to the dish and it is cooked with minimal use of spices which is a key factor in this recipe. This vegetarian recipe is perfect for a light dinner when served with chapatis or with rice.

So, here is a easy and delicious recipe of kadai bhindi masala.

Preparation time: 10 minutes
Cooking time: 15 minutes
Ingredients
- Bhindi (lady's finger)- 12
- Onion- 1(finely chopped)
- Capsicum- 1(cubed)
- Tomato- 1 (pureed)
- Ginger-garlic paste- 1tsp
- Turmeric powder- ½ tsp
- Coriander powder- 2tsp
- Red chilli powder- 1tsp
- Cashew nuts- 5
- Jeera seeds (cumin)- 1tsp
- Salt- as per taste
- Oil- 2tsp
- Water- 1 cup
Procedure
- Wash and cut bhindis into medium size.
- Heat oil in a pan and saute the bhindis for 2 minutes till the stickiness goes away. Once done, keep it aside.
- Grind the cashew nuts in a mixer with into a smooth paste with a little water.
- Now heat oil in the same pan and add jeera. Fry for a minute.
- Add onions and fry till it turns golden brown. Add ginger-garlic paste and fry for 2 minutes.
- Add the pureed tomato and salt. Cook for 2 minutes.
- Now add turmeric, red chilli powder, coriander powder and mix well.
- Add the cashew nut paste to the mixture and cook for 3 minutes.
- Pour the diced capsicum and cook for another 2 minutes.
- Add half a cup of water and add the sauteed bhindis to it.
- Cover and 5 minutes till the bhindis get completely cooked.
- Now switch off the flame and serve kadai bhindi masala with chapati or rice.
