Vegetarian Diet Recipes - Vegetable Saute
Ingredients:
1.2 zucchini (chopped into sticks)
2.1 tsp olive oil
3.2 garlic pods crushed
4.1 cup small tomatoes (halved)
5.3 cups spinach
6.1 tsp fresh lemon juice
7.1/2 pepper powder
8.Salt to taste (optional)
Method:
1.Heat a pan with a teaspoon of oil. Fry garlic for a minute on a medium flame.
2.Add chopped zucchini, tomatoes, spinach and saute for 2-3 minutes after every vegetable is added.
3.Add lemon juice, pepper powder and salt.
4.Remove pan, stir through and then serve. Tasty vegetable saute ready to serve.
This vegetarian recipe is 40-45 calories and contains no cholesterol.
Vegetarian Diet Recipes - Butternut Squash Puree
Ingredients:
1.5-6 carrots (peeled, grated)
2.1 butternut squash (peeled and chopped into cubes)
3.1/2 cup orange juice
4.1/8 tsp nutmeg
Method:
1.Boil carrots and butternut squash until tender, about 10-15 minutes.
2.Add Carrots, squash, orange juice and nutmeg to a food processor and blend until paste. Add. Season with cardamom if desired.
This vegetarian recipe contains 90 calories and has absolutely no cholesterol.
