Breakfast Special: Gajar Ka Paratha
How about a hot, stuffed paratha for breakfast this morning? A hot, roasted paratha on a chilly winter morning seems like a great idea. So, why wait? Let's start with it.
Stuffed paratha always brings aloo paratha or gobi paratha into our mind. But today we have a different kind of paratha. It is gajar ka paratha or carrot paratha.
As the name suggests, the stuffing of this paratha is made with carrots along with a medley of spices.

This unique breakfast recipe is easy to make and is extremely filling. Hence it can also be carried in lunch box too.

So, here is the recipe for gajar ka paratha. Have a look and give it a try.
Serves: 4
Preparation time: 20 minutes
Cooking time: 10 minutes
Ingredients
For Stuffing
- Carrots- 5 (grated)
- Ginger- 1tbsp (grated)
- Green chillies- 2 (finely chopped)
- Turmeric powder- ½ tsp
- Red chilli powder- 1tsp
- Dry mango powder- 1tsp
- Cumin powder- 1tsp
- Salt- as per taste
- Oil- 1tbsp
For Paratha
- Whole wheat flour- 2 cups
- Salt- a pinch
- Water- 1 cup
- Oil- 4tbsp
Procedure
1. Grate the carrots and squeeze the excess water out of it with the help of a thin cloth.
2. Heat oil in a pan and add ginger. Fry for a minute.
3. Then add the grated carrot, salt, green chillies, cumin powder, dry mango powder, red chilli powder, turmeric powder and fry for 4-5 minutes on medium flame.
4. Cover and cook the stuffing for about 5-6 minutes on low flame.
5. Once done, switch off the flame and keep the stuffing aside. Let it cool down completely.
6. Knead the whole wheat flour with salt and water. Make a semi-soft dough.
7. Divide the dough into 5-6 equal parts.
8. Take one part and roll out a small chapati.
9. Take a spoonful of the stuffing and place it at the centre of the chapati.
10. Gather all the sides of the chapati and seal it at the centre. Make it flat by gently pressing it between your palms.
11. Then carefully roll out chapatis out of the ball.
12. Fry the chapati with oil on a tawa.
13. When one side of the paratha turns golden brown, flip it to the other side. Fry until golden brown.
14. Once done, transfer it to a serving plate.
15. Repeat the same process to make more parathas.
Gajar ka paratha is ready to be served. Enjoy this delicious paratha with pickle or curry of your choice.
