Pindi Chole & Bhatura: Baisakhi Special

Pindi Chole (Serves 4)
INGREDIENTS
Chickpeas (Chole) 1½ cup
Onions (chopped) 2 (big size)
Tomatoes (chopped) 2 (big size)
Ginger 1tbsp
Garlic 1tsp
Green Chillies (chopped) 3-4
Coriander Leaves (chopped)
Coriander powder 2tsp
Ground cumin 2tsp
Turmeric powder ½ tsp
Garam Masala ½ tsp
Red Chilli powder According to taste
Salt According to taste
Oil 2-3tbsp
PROCEDURE
Soak chole in water for about 4 hours.
Place chole in a pressure cooker with enough water and salt. Cook till done and drain excess water.
Heat oil in a pan, add onions. Saute till golden-brown.
Now, add chopped ginger, garlic and green chillies to it. Fry for another 5 minutes.
Add chopped tomatoes, ground cumin, coriander and red chilli powder to it. Mix well till oil separates the mixture.
Pour boiled chole to the mixture and add salt, turmeric powder and garam masala to it. Saute well.
Simmer the gas and let it cook till all the water is absorbed.
Garnish with coriander leaves.
Serve hot with bhaturas.
Bhatura
INGREDIENTS
Maida 200gms
Milk ½ cup
Yeast 1tsp
Baking Soda ½tsp
Sugar 2tsp
Salt According to taste
Oil For deep frying
PROCEDURE
Mix all the ingredients well together.
Add some warm water and make it into a thick dough.
Cover the dough with a wet cotton cloth and keep it for 10 minutes.
Now, make small balls from this mixture and roll it into motifs.
Deep fry and serve hot.
