How To Make French Fries Crisp?

If you get a pack of Idaho tubers, you are too lucky as they are the best potatoes for french fries. They are big in size and can be sliced easily. The best part about these potatoes is that they don't shrink while frying. They are pulpy, cheesy and tasty.
Making French Fries Crispy
1. The moment you slice potatoes wrap them in a paper towel for a while. All the excess moisture gets absorbed and fries will taste crisp when fried.
2. Some use corn starch to make the potato slices crispy. They are rolled in starch and then fried.
3. The potato slices can be made crisp with the potato starch itself. Double frying the slices will make it golden brown and crunchy.
4. All the sliced potatoes need to be put in a ziplock cover and freezed overnight. Frying the freezed slices in boiling oil will have to make it crisp.
5. You will sprinkle salt just before serving the fries so that it doesn't lose its taste and crispy factor.
The oil needs to be very hot if you are planning to fry the potato snack. Perfect thin slices with interior being meaty, fluffy and strong.
