Sheer Khurma: Sweet Treat For Ramzan!

The holy month of Ramzan has started. It is the time of rejoicing and the perfect time to prepare all kinds of special dishes. Sheer khurma is one of the special dessert recipes prepared during Ramzan.
Sheer khurma is a popular Mughlai dessert recipe prepared with vermicelli and dried dates. The milk is first boiled till it is reduced and then cooked with fried vermicelli. The flavour of cardamom is simply mouthwatering and this tempting recipe is sure to give you a lip-smacking treat.

Serves: 3-4
Preparation time: 15 minutes
Cooking time: 1 hour
Ingredients
- Sevaiya (vermicelli)- 200gms (crushed into small pieces)
- Milk- 2 litres
- Sugar- 2 cups
- Cardamoms- 4 (crushed)
- Saffron- a pinch
- Dried dates- 5 (sliced and soaked in water for 1 hour)
- Almonds- 5 (chopped)
- Pistachios- 4 (sliced)
- Ghee- 3tbsp
Procedure
- Heat ghee in a non-stick pan and fry the sevaiyan in it for about 8-10 minutes on medium flame.
- Once it turns golden brown switch off the flame and keep it aside.
- Take another sauce pan and heat the milk. Bring it to a boil.
- Add cardamoms and saffron to it.
- Allow the milk to cook on low heat for about 45 minutes till it gets reduced to three-fourth of its volume.
- Now add sugar and keep stirring till it dissolves.
- Then add the sevaiyan and the soaked dry dates.
- Allow this to cook on low flame for about 5-6 minutes.
- Once done, switch off the flame and garnish with almonds and pistachios.
