Winter Soup Recipes
Carrot Ginger Soup
1. Chopped Carrots – 700gm
2.Chopped Onions – 2
3.Crushed Garlic – 3 cloves
4.Olive Oil – 3 tbsp
5.Ginger – 1 stick
6.Chicken/vegetable stock – 1.6 lts
7.Lemon Rind – 1
8.Chopped Parsley – 2 tbsp
9.Salt and Pepper – to taste
Method
1.Heat live oil in a pan and then put onions and carrot. Saute it for few minutes.
2.Add garlic and curry powder and stir for few minutes
3.After the carrot is a bit tender add lemon rind and cover the lid. Stir it in intervals after every 20 minutes.
4.After cooked make it into a smoothie. Add salt and pepper to it.
5.Garnish it with crispy fried bread and parsley.
Chicken Tortilla Soup – Chicken tortilla soup is Mexican soup. It's spicy, delicious and healthy.
Ingredients
1.Shredded chicken – 1 cup
2.Chicken stock – 3 cups
3.Diced Onion – 3
4.Bell Pepper – 3 chopped
5.Corn – 1 cup
6.Kidney beans – 1 cup
7.Taco seasoning – 1 packet
8.tortilla chips
9.Cheese – To Taste
Method
1.Put all the vegetables in the chicken stock and bring it to a boil with salt, pepper and chilli flakes.
2.Put tortilla chips in a bowl and pour the soup into it.
3.Add pepper, chilli flakes and loads of cheese.
4.Serve it with chips on top.
The Chicken tortilla soup can be preserved and served later.
Tomato Macaroni Soup
1.Tomatoes - 4
2.Soaked Macaroni – 2 cups
3.Butter – 5 Tbsp
4.Garlic – 5 cloves
5.Corn – 1 cup
6.Carrots – 1 cup
7.Capsicum – 1
8.Salt and Pepper – to taste
9.Grated cheese – 1 cup
Method
1.Blanch tomatoes and make then into puree
2.Add butter into the pan with chopped garlic.
3.When the garlic is golden brown, add the tomato puree
4.Add carrots and capsicum.
5.When the vegetables are soft, add the tomato puree.
6.Stir it till the time the puree is a bit thick.
7.Add the macaroni and stir well
8.Serve it with pepper and grated cheese.
These three winter soup recipes are healthy and also serves the need of your health this winter.
