Penang Laksa Soup For A Healthy You!

Today, we bring you a lip-smacking Penang Laksa soup that is yummy and very easy to prepare. The key ingredient of this soup is coconut and noodles. We all know the health benefits of coconut. It is high in saturated fats that is easily metabolised. Coconut milk is very good for your skin and it has been used as the main ingredient in many cuisines around the world. Ingredients
- Onion-1 (roughly chopped)
- Lemon grass stem- 2tbsp (finely chopped)
- Cornflour- 1tbsp
- Coconut milk- 2 cups
- Vegetable stock- 2½ cups
- Oil- 1tbsp
- Paneer- ¼ cup (sliced)
- Bean sprout- 1/2 cup
- Boiled noodles- ½ cup
- Salt- to taste
- Turmeric powder- 1/4 tbsp
- Kashmiri dry chillies- 2 (broken)
- Garlic- 2 cloves
- Tamarind- 1tbsp
- Sugar- 1tbsp
- Basil leaves (for garnishing)
Procedure
- Blend onions and lemon grass with 2tbsp water and make a thin paste. Keep the paste aside.
- In a bowl, dissolve the cornflour and coconut milk together. Whisk and keep the mix aside.
- Heat the oil in a deep bottomed pan on a high flame. Add the paste and cook for 1-2 minutes.
- Add the vegetable stock and salt and bring it to boil.
- Now, lower the flame and add the coconut milk and cornflour mix. Simmer it for another 5 minutes.
- Add the bean sprout and finely sliced paneer and simmer it for next 2 minutes. Put the pan off flame.
Penang Laksa soup is ready. Put the boiled noodles in serving bowl. Garnish it with basil leaves. Serve the soup immediately.
