Veg Minestrone Soup Recipe
Are you looking forward to try your culinary skills with a combination of both taste and health? Then try your hands on preparing veg minestrone soup which promises to be nutritious and delicious at the same time. Minestrone soup is basically an Italian
recipe and is made with the blend of vegetables and macaroni which
leaves you filled and satisfied.
The ingredients used in making this soup adds to the grandeur and makes the minestrone soup the most sought out dishes in restaurants. The mild taste with a tinge of sour surely tickles your taste buds making you crave for more.

Ingredients
- Oil- 2tsp (preferably olive oil)
- Onion- 1 (finely chopped)
- Garlic and cloves- 2 to 3 (finely chopped)
- Carrot- 1 (finely chopped)
- Zucchini- 1 (chopped)
- French beans- 4 to 6 (chopped)
- Sweet corn kernels- 1/3 cup
- Celery, stalks- 1 (chopped)
- Canned cannelloni beans- 1
- Cooked macaroni- 1 cup
- Tomatoes- 2½ (boiled and pureed)
- Dry red chilli flakes- 1tsp
- Dried oregano- 1tsp
- Fresh basil leaves- 3
- Salt and pepper- to taste
Procedure
- Take a deep bottomed pot and add olive oil to it.
- Add chopped onions and cook until it turns golden brown.
- After it turns soft add crushed garlic and cloves. Stir it for about 2 minutes.
- Add carrots, stalks and zucchini and cook until they begin to blend tender.
- Stir in cannelloni beans, French beans dried oregano and basil.
- Add the pureed tomatoes, dry red chilli flakes.
- Reduce the heat to low and simmer for about 10 minutes.
- Cook the macaroni and stir the dish well until it is completely cooked.
- Season the dish with Parmesan cheese.
With your healthy soup ready to relish, serve it with chopped raw carrots and cucumbers.
