Ghiya Kofta Recipe: Step By Step
Koftas made of ghiya or bottle gourd are very popular in India. Ghiya koftas are sometimes also referred to as lauki koftas. You may already know many kofta recipes. But the real challenge is to learn a recipe step by step. Every step of the recipe is equally important. A step by step kofta recipe also gives you the visual guidance that is otherwise absent in other recipes.
Ghiya koftas are basically very delicious Indian snack. These fried snacks are usually enjoyed with pudina chutney. The step by step recipe for koftas also includes the procedure to make pudina chutney. If you are having some unexpected guests, then the quickest way to prepare snacks for them would be to follow this step by step kofta recipe.
Ghiya koftas are really easy to make. All you need to do is grate the bottle gourd, mix it with besan or gram flour, add some spices and roll it into small balls. Then fry the kofta balls in steaming hot oil. For making pudina chutney, all you have to do is, grind all the chutney ingredients together to form a thick paste.
To help you do a thorough job of making koftas and pudhina chutney, here is a step by step illustrated recipe for the same.

Cooking time- 15 minutes
Ingredients For Kofta
- Ghiya bottle gourd- 500 gms (grated)
- Besan or gram flour- 1 cup
- Red chilli powder- ½ tsp
- Garam masala- 1tsp
- Green chillies- 3 (chopped)
- Coriander leaves- 2 stalks (chopped)
- Carom seeds or Ajwain- ½ tsp
- Baking soda- 1 pinch
- Salt- as per taste
- Oil- 2 cups
Ingredients For Pudina Chutney
- Pudina leaves- 100 grams
- Onions- 2 (medium sized, cut into 4 halves)
- Garlic- 4 cloves
- Green chillies- 4
- Salt- as per taste

Pudina
Take 100 grams of pudina. Sift out the leaves, wash them and keep in a bowl.

Onions
Chop two onions roughly. The chopping doesn't have to be fine because you will grind the ingredients in a blender anyway.

Garlic Cloves
Take 4 cloves of garlic whole. There is no need to chop the garlic cloves.

Green Chillies
Break the green chillies into halves and put them into the pudina bowl.

Grind Chutney
Place all the ingredients namely, pudina, garlic, onions and green chillies in a blender and grind it into a paste.

Chutney Is Ready
Pour out the chutney into a bowl. Add some salt according to taste and mix it up.

Grate Ghiya
Grate Ghiya and remove extra water (by squeezing) before mixing it with all the ingredients.

Mix Besan
Take a bowl full of besan or gram flour and add to the grated ghiya. The besan will bind the koftas.

Make Dough
Add red chilli powder, garam masala, green chillies, baking soda, coriander leaves and salt to the ghiya. Knead the mixture like a dough.

Make Kofta Ball
Roll the dough into small balls or koftas. Make sure they are tight and not running due to excess water.

Fry Kofta
Heat oil until it steams in a deep bottomed pan. Fry the koftas until they turn golden brown. You need to fry them on a low flame for 5-7 minutes so its well-cooked from inside.

Koftas and Pudina Chutney
Serve the ghiya koftas you made with this pudina chutney.
