Kurkure literally means crispy. This crispy snack recipe can be prepared in minutes and is a perfect recipe to try if you are new to cooking. This crispy, deep fried snack is an ideal accompaniment with tea or coffee. But make sure you serve this crispy snack with the right dip, otherwise you may miss out on the real taste.

Cooking time: 5 minutes
Ingredients
- Potatoes- 1 cup (boiled and mashed)
- Mint leaves- ½ cup (chopped)
- Green chillies- ½ tbsp (finely chopped)
- Roasted cumin powder- ½ tsp
- Lemon juice- ½ tsp
- Salt- as per taste
- Maida- ½ cup
- Poha- ½ cup (coarsely ground)
- Water- ½ cup
- Oil- for deep frying
Procedure
1. Mix the mashed potatoes, chopped mint leaves, green chillies, roasted cumin powder, salt and lemon juice together in a mixing bowl.
2. Make small round balls out of the mixture and keep it aside.
3. Mix the maida with half a cup of water to form a thick batter.
4. Spread the coarsely ground poha on a plate.
5. Now dip the potato balls into the maida batter and then roll them on the poha.
6. Make sure all the sides of the balls are coated well.
7. Heat the oil for deep frying in a kadhai.
8. Once the oil gets hot, put in the potato balls and fry them on medium heat.
9. Wait till the balls turn golden brown.
10. Once done, transfer the balls into a plate.
11. Make more balls by following the same steps.
Aloo kurkure is ready to be served. Enjoy this delicious snack with sweet and sour chutney or dip.
