Beguni: Bengali Snacks For Monsoon
Beguni is a Bong's favourite snack. In this, brinjal is fried with besan (gram flour). This simple monsoon recipe tastes heavenly on a lazy, rainy evening. This Bengali recipe is nothing complicated. Beguni can be prepared in just ten minutes. The flavour of this monsoon recipe comes from kalonji or onion seeds, so you must add plenty to get the flavour of these seeds.
Ingredients For Beguni:
Brinjal 1 (sliced longitudinally into 6-8 pieces)
Besan or gram flour 1 cup
Green chillies 2 (chopped)
Kalonji or onion seeds 1 teaspoon
Turmeric powder 1 teaspoon
Salt as per taste
Mustard oil 1 cup (for deep frying)
Procedure For Frying Beguni:
Rub salt and turmeric powder on the brinjal pieces and leave them aside.
In a bowl, take besan, green chillies, kalonji and a bit of salt. Dilute it with half cup of water and mix uniformly.
Now heat mustard oil in a frying pan. As this is a Bengali recipe, it is best to use mustard oil. You can also use any other vegetable oil of your choice.
Dip the brinjal pieces in the batter. When the oil is hot add them and deep fry.
Cover the pan and let the brinjal cook on low flame for 5 minutes.
Strain the fried brinjal when it looks crisp and golden in colour.
You can serve beguni with a cup of steaming tea as an evening snack. You can also enjoy it as a side dish with dal and rice.
