Karaikudi Chicken Masala Recipe
South Indian recipes are a great delight for those who love Indian spices. Even among the South Indian cuisine, Chettinad cuisine has its own unique place. Chettinad cuisine is popular for it's delectable non vegetarian dishes. Chettinad chicken is a famous dish all over the world. Similarly, a more spicy version with pepper known as the Karaikudi chicken masala is a real delight for the spice lovers.
Karaikudi chicken masala is basically a pepper chicken masala preparation. A lot of spices and especially pepper goes into the making of this chicken recipe. Since the delicacy hails from the area Karaikudi, it is named as Karaikudi chicken. Prepare this delightful recipe only if your taste-buds are ready for a hot treat because this chicken recipe will surely set your tongue ablaze.

Marination time: 1 hour
Cooking time: 30 minutes
Ingredients
- Chicken- 1 kg
- Onion- 1 (medium sized, finely chopped)
- Tomato- 1 (chopped)
- Garlic- 5 cloves (finely chopped)
- Salt- as per taste
For Marinade
- Red chilli powder- 1tsp
- Pepper powder- 1tsp
- Turmeric powder- 1tsp
- Yogurt- ½ cup
- Ginger-garlic paste- 1tbsp
For Coconut Paste
- Coconut- 2tbsp (grated)
- Poppy seeds- 1tbsp
- Fennel seeds- 1tsp
For Wet Grind
- Ginger- 1 medium sized piece
- Garlic- 8-10 cloves
- Onion- 3 (medium sized)
- Green chillies- 3
- Black peppercorns- 10
- Coriander seeds- 1tbsp
For Tempering
- Oil- 2tbsp
- Fennel seeds- ½ tsp
- Cloves- 3
- Cinnamon stick- 1
- Cardamom- 2
- Bay leaf- 1
- Mint leaves- 1tbsp (chopped)
- Curry leaves- 1 sprig
Procedure
- Clean and wash the chicken pieces properly under clear running water.
- Marinate the chicken pieces with all the ingredients listed under 'For Marinade'. Keep it aside for an hour.
- Grind all the ingredients listed under 'For Wet Grind' with a little water into a thick paste. Keep it aside.
- Then grind the coconut, poppy seeds, fennel seeds with little water into a thick paste and keep it aside.
- After an hour, heat oil in a pan and add all the tempering ingredients one by one and fry for 2-3 minutes.
- Then add the chopped onion, garlic and fry for 3-4 minutes.
- Next add the prepared onion-coriander seeds paste to the pan and saute for 3-4 minutes.
- Then add the chopped tomatoes, salt and saute for 2-3 minutes.
- Now add the marinated chicken pieces and cook on a medium flame for 5-6 minutes.
- Then add the ground coconut paste and cook for 8-10 minutes.
- Add water, cover and cook for 15-20 minutes on a low flame.
- Once done, open the lid and check if the chicken is completely cooked.
- Once the chicken is cooked, switch off the flame and serve.
Karaikudi chicken masala is ready to be served. Enjoy this delectable and spicy chicken dish with steamed rice.
