Masala Egg Bhurji Recipe
Egg bhurji is one of the best egg recipes everywhere. Commonly known as scrambled eggs, egg bhurji in India is a staple breakfast recipe that is teamed up with roasted bread slices and juice. Some people even have egg bhurji with rice or rotis. Egg is a healthy breakfast. Eggetarians and non-vegetarians always prefer to have boiled egg, omelette or any other egg recipe to start off their day.
Egg is filling, nutritious and healthy too. So, having egg for breakfast controls hunger and also keeps you active for the whole day. We all know the basic egg bhurji recipe that is made with very less spices and vegetables. Here is the masala egg bhurji in Mumbai style. This egg breakfast recipe is made with egg, paneer, ginger, garlic and vegetables like onions and tomatoes. Check out the lip smacking masala egg bhurji recipe.

Egg bhurji, Mumbai style recipe:
Serves: 3
Preparation time: 5 minutes
Cooking time: 15 minutes
Ingredients
- Eggs- 5
- Paneer/cottage cheese- 2tbsp grated
- Onions- 2 (finely chopped)
- Tomato- 1 (finely chopped)
- Green chillies- 3 (finely chopped)
- Ginger -garlic paste- ½tsp
- Black pepper powder- 1tsp
- Red chilli powder- ½tsp
- Salt- as per taste
- Chaat masala- a pinch
- Butter- 2-3 tbsp
- Coriander leaves- 2tbsp (chopped)
Procedure
- Melt butter in a frying pan and saute the onions for a minute. Add the ginger-garlic paste and mix well.
- When the onions become tender and look golden brown, add green chillies, tomatoes and grated paneer. Mix well and cook for 2-3 minutes on a medium flame.
- Sprinkle salt, black pepper powder red chilli powder and chaat masala and mix all the ingredients well so that the masala is absorbed. Meanwhile, whisk the eggs in a bowl 4-5 times.
- Now add the whisked eggs into the pan and scramble them. So, keep stirring the mixture till the crumbs are formed. Cook on a medium flame for around 4 minutes till the eggs are completely scrambled and cooked.
Garnish the the masala egg bhurji with coriander leaves. Serve this Mumbai style dish hot with roasted breads for breakfast.
